  • 1 teaspoon onion powder
  • 2 large eggs
  • 1/2 cup (120ml) milk
  • 1/3 cup (80ml) olive oil
  • 1 1/2 cups (150g) shredded zucchini (moisture squeezed out)
  • 1 cup (100g) shredded cheddar cheese
  • 2 tablespoons chopped chives or scallions (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease or line a 9×5-inch loaf pan with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, garlic powder, and onion powder.
  3. In another bowl, whisk the eggs with milk and olive oil until smooth.
  4. Pour wet ingredients into dry and stir gently until just combined.
  5. Fold in shredded zucchini and cheddar cheese until incorporated. Do not overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top. Optionally sprinkle with extra cheese or chives.
  7. Bake for 45–50 minutes or until a toothpick inserted comes out clean and top is golden brown.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
