  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (14.5 oz) can diced tomatoes
  • 1 (4 oz) can diced green chilies
  • 3 cups chicken broth
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 8 oz cream cheese, softened
  • 1½ cups shredded cheddar cheese

Instructions

  1. Layer ingredients: Place chicken breasts in the bottom of the slow cooker. Add onion, bell peppers, black beans, tomatoes, green chilies, spices, and chicken broth. Stir gently.
  2. Slow cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until chicken is tender.
  3. Shred chicken: Remove chicken, shred with two forks, and return to the slow cooker.
  4. Add cheese: Stir in softened cream cheese and shredded cheddar until fully melted and smooth.
  5. Thicken: Cook uncovered for an additional 15–20 minutes.
  6. Serve: Ladle into bowls and garnish as desired.
