Leftover Mashed Potato Cheese Puffs are crispy, cheesy bites that turn leftover mashed potatoes into a whole new dish. Easy to make, customizable, and perfect for potlucks or snacks.

Ingredients

Scale
  • 2 cups leftover mashed potatoes (or prepared instant mashed potatoes)
  • 1/2 cup shredded cheese (cheddar, mozzarella, Parmesan, or blend)
  • 1 large egg
  • 1/4 cup breadcrumbs
  • 2 tablespoons chopped green onions (optional)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 tablespoon butter (for greasing baking sheet)

Instructions

  1. Preheat Oven: Preheat to 375°F (190°C). Line a baking sheet with parchment paper or grease it lightly.
  2. Mix Ingredients: In a bowl, combine mashed potatoes, cheese, egg, breadcrumbs, green onions, garlic powder, pepper, and salt until well combined.
  3. Shape Puffs: Scoop out portions and roll into balls. Place on baking sheet, spaced 2 inches apart. Gently flatten if desired.
  4. Bake: Bake for 20–25 minutes until golden brown and crispy, flipping halfway if needed.
  5. Serve: Let cool for a few minutes and serve warm with your favorite dipping sauce.

Notes

  • Use cold mashed potatoes for best results.
  • Experiment with cheeses, bacon, herbs, or jalapeños for variations.
  • Store in an airtight container in the fridge up to 3 days.
