This cheesy low carb Philly cheesesteak casserole is a hearty, high-protein, keto-friendly comfort dish loaded with seasoned beef, sautéed peppers and onions, cream cheese, and gooey melted provolone. A carb-free take on a classic, perfect for busy weeknights or meal prep!
Ingredients
1 ½ pounds ground beef (or thinly sliced ribeye) 2 medium bell peppers (1 green, 1 red), thinly sliced 1 medium onion, thinly sliced 2 cloves garlic, minced 4 ounces cream cheese, softened 1 tablespoon Worcestershire sauce 1 ½ cups shredded provolone cheese ½ cup shredded mozzarella cheese 1 tablespoon olive oil Salt and black pepper, to taste Optional: chopped parsley and hot sauce, for garnish
Instructions
1. Preheat oven to 375°F and grease a 2-quart casserole dish. 2. In a large skillet over medium heat, cook ground beef until browned, seasoning with salt and pepper. Drain excess fat and set aside. 3. In the same skillet, heat olive oil and sauté bell peppers and onions until tender, about 5–7 minutes. Add minced garlic and cook 30 seconds more. 4. Return beef to skillet and stir in softened cream cheese and Worcestershire sauce until creamy and well combined. Taste and adjust seasoning. 5. Transfer beef mixture to prepared casserole dish. Top evenly with provolone and mozzarella. 6. Bake for 15–20 minutes, until cheese is melted and bubbly. 7. Garnish with parsley if desired and serve hot with your favorite low carb sides.
