Description
If you’re searching for a quick, easy, and delicious dinner that your whole family will love, this Cheesy Kielbasa Rice and Broccoli Skillet recipe is a fantastic choice.
Ingredients
- 450g kielbasa sausage, sliced into ½-inch rounds
- 1 ½ cups (300g) uncooked white rice
- 3 cups (300g) fresh broccoli florets
- 1 medium onion, diced
- 3 garlic cloves, minced
- 3 cups (720ml) chicken broth or stock
- 1 cup (240ml) milk
- 1 ½ cups (170g) shredded cheddar cheese
- 2 tbsp olive oil
- 1 tsp smoked paprika
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Cook the kielbasa: Heat olive oil in a large skillet over medium-high heat. Add sliced kielbasa and cook until browned and slightly crispy, about 5 minutes. Remove from the skillet and set aside.
- Sauté aromatics: In the same skillet, add diced onion and sauté until softened, about 3 minutes. Stir in minced garlic and smoked paprika and cook for 1 minute until fragrant.
- Add rice and liquids: Pour in uncooked rice, stirring to coat it with the oil and aromatics. Add chicken broth and milk. Stir well and season with salt and pepper.
- Cook broccoli and simmer: Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 10 minutes. After 10 minutes, scatter broccoli florets evenly on top without stirring. Cover and continue cooking for another 8-10 minutes until rice is tender and broccoli is crisp-tender.
- Add cheese and kielbasa: Return the cooked kielbasa to the skillet. Sprinkle shredded cheddar cheese over the top. Cover and cook for 2-3 minutes until cheese melts.
- Garnish and serve: Remove from heat, sprinkle with fresh parsley if desired, and serve hot straight from the skillet.
Notes
Use fresh broccoli for the best texture; frozen broccoli can make the dish soggy. Don’t stir the broccoli into the rice during cooking to keep it from overcooking and turning mushy. For extra smoky flavor, try adding a dash of smoked paprika or a pinch of cayenne pepper. To make it creamier, stir in a splash of cream or extra cheese before serving. Let the skillet rest covered for a few minutes after cooking to allow the flavors to meld.
