Description

Looking for a light, fruity dessert that’s as fun to make as it is to eat? These Cheesecake Fruit Salad Roll Ups are the perfect no-bake treat for summer parties, picnics, or any time you want to enjoy a creamy, fresh dessert without turning on the oven

Ingredients

Scale

For the Cheesecake Filling:

  • 8 oz (225g) cream cheese, softened
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup whipped topping (or homemade whipped cream)

For the Fruit Salad Mix:

  • ½ cup diced strawberries
  • ½ cup blueberries
  • ½ cup diced kiwi or mango
  • ½ banana, finely sliced (optional)
  • ½ tablespoon lemon juice (to prevent browning)

For the Wraps:

  • 4 large flour tortillas or flatbread wraps

Optional Toppings:

  • Extra whipped cream for garnish
  • Fresh mint leaves
  • A dusting of powdered sugar
  • Honey or fruit drizzle

Instructions

Step 1: Prepare the Cheesecake Filling
In a mixing bowl, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract and continue to mix until creamy. Gently fold in the whipped topping until fully combined.

Step 2: Prep the Fruit
Dice your fresh fruits into small, even pieces. If using banana or apple, toss with lemon juice to prevent browning.

Step 3: Assemble the Roll Ups
Lay a tortilla flat on a clean surface. Spread a generous layer of cheesecake filling evenly across the tortilla, leaving about ½ inch from the edge. Sprinkle about ½ cup of the chopped fruit evenly over the cream layer.

Step 4: Roll and Chill
Gently roll the tortilla up tightly, jelly-roll style. Wrap the roll in plastic wrap and chill for at least 30 minutes to firm up.

Step 5: Slice and Serve
Once chilled, remove the wrap and slice into 1-inch pinwheels. Arrange on a serving platter, garnish with extra fruit or mint, and enjoy!

Notes

  • Use soft tortillas or wraps – They’re easier to roll without cracking.
  • Don’t overfill – Too much fruit can make the roll hard to seal.
  • Chill before slicing – This helps the roll firm up and hold its shape.
