When you’re craving something warm, savory, and undeniably satisfying, few things hit the spot like a freshly baked cheese bread.
For the dough:
3½ cups (525g) all-purpose flour
2¼ teaspoons instant or active dry yeast (1 packet)
1 teaspoon sugar
1 teaspoon salt
1¼ cups (310ml) warm water
2 tablespoons olive oil or melted butter
For the cheese filling and topping:
1½ to 2 cups shredded cheese (cheddar, mozzarella, or a mix)
Optional: 2 tablespoons grated parmesan
Optional: 1 teaspoon garlic powder or dried herbs
Optional: Melted butter for brushing the top before baking
Step 1 – Activate the yeast (if using active dry yeast)
Combine warm water, sugar, and yeast in a bowl. Let it sit for 5–10 minutes until frothy. If using instant yeast, you can skip this step and mix it directly with the flour.
Step 2 – Mix the dough
In a large bowl, combine flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms. Knead by hand or in a stand mixer for 8–10 minutes until smooth and elastic.
Step 3 – Let it rise
Place the dough in a lightly oiled bowl, cover, and let it rise in a warm spot for 60–90 minutes or until doubled in size.
Step 4 – Shape and fill with cheese
Punch down the dough and roll it out into a rectangle. Sprinkle with most of the shredded cheese and any herbs or seasonings you’re using. Roll it up like a jelly roll and place seam-side down in a greased loaf pan.
Step 5 – Final rise
Cover and let rise again for 30–45 minutes until puffy.
Step 6 – Add more cheese and bake
Sprinkle the remaining cheese on top. Bake in a preheated 375°F (190°C) oven for 30–35 minutes, or until golden and a toothpick inserted into the center comes out clean.
Step 7 – Cool and serve
Brush the top with melted butter if desired. Let cool slightly before slicing. Serve warm or at room temperature.
Use warm—not hot—water to activate the yeast properly
