- 1 head garlic (roasted)

- 2 pounds (900g) Yukon gold potatoes, peeled and cubed
- 4 cups (950ml) vegetable broth
- 1 cup (240ml) full-fat coconut milk
- 1 ½ teaspoons dried thyme
- 1 teaspoon dried parsley
- ½ teaspoon smoked paprika
- ½ teaspoon dried oregano
- Salt and pepper, to taste
- 2 cups (200g) sharp cheddar cheese, shredded
- Optional: ½ teaspoon red pepper flakes
- Fresh herbs for garnish
Instructions
- Roast the Garlic: Preheat oven to 400°F (200°C). Slice top off garlic head, drizzle with olive oil, wrap in foil, and roast 30–40 minutes until golden and soft. Cool and squeeze out cloves.
- Sauté the Onions: In a large pot, heat olive oil over medium heat. Add onion and cook 3–4 minutes until translucent.
- Add Potatoes and Broth: Stir in potatoes, roasted garlic, thyme, parsley, paprika, oregano, salt, and pepper. Pour in broth and bring to a boil.
- Simmer: Reduce heat and cook 20–25 minutes until potatoes are tender.
- Blend: Use an immersion blender (or regular blender in batches) to blend until smooth and creamy.
- Add Coconut Milk and Cheese: Stir in coconut milk and shredded cheddar until melted and velvety.
- Serve and Garnish: Ladle into bowls, top with fresh herbs, extra cheese, or crispy toppings.

- For best melt, shred your own cheddar instead of using pre-shredded.
