  • 1 head garlic (roasted)

  • 2 pounds (900g) Yukon gold potatoes, peeled and cubed
  • 4 cups (950ml) vegetable broth
  • 1 cup (240ml) full-fat coconut milk
  • 1 ½ teaspoons dried thyme
  • 1 teaspoon dried parsley
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • Salt and pepper, to taste
  • 2 cups (200g) sharp cheddar cheese, shredded
  • Optional: ½ teaspoon red pepper flakes
  • Fresh herbs for garnish

Instructions

  1. Roast the Garlic: Preheat oven to 400°F (200°C). Slice top off garlic head, drizzle with olive oil, wrap in foil, and roast 30–40 minutes until golden and soft. Cool and squeeze out cloves.
  2. Sauté the Onions: In a large pot, heat olive oil over medium heat. Add onion and cook 3–4 minutes until translucent.
  3. Add Potatoes and Broth: Stir in potatoes, roasted garlic, thyme, parsley, paprika, oregano, salt, and pepper. Pour in broth and bring to a boil.
  4. Simmer: Reduce heat and cook 20–25 minutes until potatoes are tender.
  5. Blend: Use an immersion blender (or regular blender in batches) to blend until smooth and creamy.
  6. Add Coconut Milk and Cheese: Stir in coconut milk and shredded cheddar until melted and velvety.
  7. Serve and Garnish: Ladle into bowls, top with fresh herbs, extra cheese, or crispy toppings.
