1 medium head of cauliflower, cut into bite-sized florets 1 red bell pepper, diced 1 yellow bell pepper, diced 1/2 cup black or Kalamata olives, sliced 1/4 cup capers, rinsed 1/2 red onion, thinly sliced 2 tablespoons chopped fresh parsley Salt and black pepper, to taste For the dressing: 1/4 cup extra virgin olive oil 3 tablespoons red wine vinegar 1 teaspoon Dijon mustard 1 clove garlic, minced 1/2 teaspoon dried oregano Salt and pepper, to taste


Instructions

1. Bring a large pot of salted water to a boil. Blanch cauliflower florets for 2–3 minutes until crisp-tender. Drain and transfer to an ice water bath. Drain well. 2. In a large bowl, combine cauliflower, diced peppers, sliced onion, olives, capers, and parsley. 3. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, oregano, salt, and pepper until emulsified. 4. Pour dressing over salad and toss gently to coat. Taste and adjust seasoning if needed. 5. Chill for at least 30 minutes before serving for best flavor. Garnish with extra parsley if desired.
