Instructions

  1. Preheat oven: Set oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix dry ingredients: In a large bowl, combine oats, flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. Combine wet ingredients: In another bowl, whisk egg, melted coconut oil (or butter), honey, and vanilla extract until smooth.
  4. Combine everything: Pour wet ingredients into dry ingredients and stir until just combined. Fold in grated carrots, nuts, and raisins.
  5. Scoop and bake: Scoop tablespoon-sized portions onto the baking sheet, flatten slightly, and bake for 10–12 minutes until golden around edges.
