- ¼ cup (30g) raisins (optional)
Instructions
- Preheat oven: Set oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix dry ingredients: In a large bowl, combine oats, flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Combine wet ingredients: In another bowl, whisk egg, melted coconut oil (or butter), honey, and vanilla extract until smooth.
- Combine everything: Pour wet ingredients into dry ingredients and stir until just combined. Fold in grated carrots, nuts, and raisins.
- Scoop and bake: Scoop tablespoon-sized portions onto the baking sheet, flatten slightly, and bake for 10–12 minutes until golden around edges.
- Cool and enjoy: Let cookies cool for 5 minutes before transferring to a wire rack. Enjoy warm or at room temperature.
