Step 1: Preheat & Prepare the Pan
Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper and lightly grease it.
Step 2: Make the Carrot Cake Batter
- In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
- In another bowl, mix brown sugar, granulated sugar, oil, eggs, and vanilla extract until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the grated carrots and chopped nuts (if using).
Step 3: Make the Cheesecake Layer
- In a separate bowl, beat cream cheese, sugar, egg, and vanilla extract until smooth and creamy.
Step 4: Assemble the Bars
- Pour ¾ of the carrot cake batter into the prepared pan and spread evenly.
- Pour the cheesecake mixture over the carrot cake layer.
- Dollop the remaining carrot cake batter on top and swirl with a knife or toothpick for a marbled effect.
Step 5: Bake & Cool
- Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool completely before slicing into bars.
Step 6: Serve & Enjoy
- Slice into 12-16 squares and serve chilled or at room temperature.
- Optionally, dust with powdered sugar or drizzle with cream cheese glaze.
