  • 1/2 cup sour cream or heavy cream
  • 3 tablespoons butter, softened
  • 1 teaspoon pure vanilla extract (optional)
  • 12 tablespoons monk fruit or allulose sweetener (optional)

Instructions

  1. Preheat and Prepare: Preheat oven to 325°F (160°C). Grease an 8-inch springform pan and line the bottom with parchment paper.
  2. Make the Crust (optional): Combine crushed pork rinds and melted butter. Press into the bottom of the pan and bake for 8–10 minutes until lightly golden. Set aside to cool.
  3. Prepare the Filling: Beat cream cheese and butter together until smooth. Add eggs one at a time, then mix in sour cream and vanilla. Blend until creamy and lump-free.
  4. Assemble and Bake: Pour filling into the crust (or directly into the greased pan). Bake 35–40 minutes, until the center is slightly jiggly.
  5. Cool and Chill: Turn off the oven and let cheesecake cool inside with the door ajar for 30 minutes. Refrigerate for at least 4 hours before slicing.
  6. Serve: Enjoy chilled, topped with whipped cream, butter curls, or a sprinkle of sea salt.
