Ingredients
Scale
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 large yellow onion (about 200g), thinly sliced
- 8 oz (225g) baby bella mushrooms, cleaned and sliced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon chopped fresh thyme (optional)
- 1 tablespoon balsamic vinegar (optional)
Instructions
- Prepare the Vegetables: Clean mushrooms and slice them evenly. Thinly slice the onion.
- Heat the Pan: In a large skillet over medium heat, melt butter and oil together. Add sliced onions.
- Caramelize the Onions: Cook onions for 10–15 minutes over medium-low heat, stirring occasionally.
- Add the Mushrooms: Add sliced mushrooms and cook another 10–15 minutes until browned and tender.
- Season: Add salt, pepper, and optional thyme and balsamic vinegar. Cook 3–5 more minutes.
- Serve: Remove from heat and serve warm as a topping or side dish.
Notes
- Go low and slow for rich, deep flavor.
- Use both oil and butter for balanced browning and taste.
- Don’t overcrowd the pan to allow mushrooms to brown.
- Let sit between stirs to develop caramelization.
- Make it vegan: Use plant-based butter or only olive oil.
