Description

This Caramelized Onion and Gruyère Dip is the ultimate fall appetizer — rich, creamy, savory, and elegant. Slow-cooked caramelized onions bring natural sweetness while nutty Gruyère cheese melts into gooey perfection. Perfect for Thanksgiving appetizers, holiday spreads, cozy fall nights, or game-day gatherings. Serve it hot and bubbling with crusty bread, crostini, or crackers and watch it disappear!

Ingredients

Scale
  • 3 medium yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon sugar (optional, enhances caramelization)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1 1/2 cups shredded Gruyère cheese
  • 1/4 cup grated Parmesan cheese
  • Optional: fresh thyme or chopped parsley for garnish

Instructions

  1. Caramelize the onions: Heat butter and olive oil in a skillet over medium-low. Add sliced onions, salt, and pepper. Cook 30–40 minutes, stirring occasionally, until golden brown. Stir in sugar halfway if using.
  2. Mix the dip base: In a bowl, combine mayonnaise, sour cream, garlic powder, half the Gruyère, and all of the Parmesan. Stir in cooled caramelized onions.
  3. Bake the dip: Preheat oven to 375°F (190°C). Transfer mixture to a baking dish, sprinkle with remaining Gruyère, and bake 20–25 minutes until bubbly and golden.
  4. Serve: Remove from oven, cool 5 minutes, garnish with fresh herbs, and serve warm with crostini, crackers, or sliced baguette.

Notes

  • Caramelize onions low and slow for the sweetest flavor.
  • Add a splash of balsamic vinegar at the end for depth.
  • Prepare ahead: assemble the dip and refrigerate, then bake before serving.
  • Not freezer-friendly — best enjoyed fresh.
  • Use high-quality Gruyère for the richest flavor and perfect melt.
