Description

Caramelized Brussels Sprouts with Cranberry Pear Glaze is a festive and flavorful winter side dish featuring golden roasted sprouts, sweet pears, and a glossy cranberry glaze. This easy recipe blends sweet, tart, and savory flavors for a stunning, nutritious dish that’s perfect for holidays, Friendsgiving, or Healthy Winter Meals.

Ingredients

Scale

Ingredients:

  • 1 ½ lbs (680 g) Brussels sprouts, trimmed and halved
  • 2 ripe pears, sliced (Bosc or Anjou preferred)
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp butter (optional, for extra caramelization)

For the Cranberry Pear Glaze:

  • 1 cup (100 g) fresh or frozen cranberries
  • ½ cup (120 ml) pear juice or apple cider
  • 2 tbsp honey or maple syrup
  • 1 tsp Dijon mustard
  • 1 tsp white balsamic vinegar
  • Pinch of salt

Instructions

  1. Preheat and Prepare: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Roast the Brussels Sprouts and Pears: Toss sprouts and pear slices with olive oil, salt, and pepper. Spread evenly on the baking sheet, cut sides down. Roast 20–25 minutes, stirring halfway, until caramelized and tender.
  3. Make the Cranberry Pear Glaze: In a small saucepan, combine cranberries, pear juice, honey, mustard, and vinegar. Simmer 10 minutes until cranberries burst and sauce thickens slightly. Stir in a pinch of salt and mash or blend for a smooth glaze.
  4. Combine and Serve: Transfer roasted sprouts and pears to a serving bowl. Pour warm glaze over the top, toss gently, and garnish with fresh thyme or toasted pecans if desired. Serve immediately.

Notes

  • Dry your sprouts: Moisture prevents caramelization—pat them completely dry.
  • High heat matters: Roast at 425°F or higher for perfect browning.
  • Don’t overcrowd the pan: Use two sheets if needed for crispness.
  • Add glaze at the end: Keeps the texture crisp and glossy.
  • Variation: Add toasted nuts, crumbled goat cheese, or roasted fennel for a twist.
