- 2 tablespoons unsalted butter (30g)
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 ½ cups chopped pecans (150g)
- ¼ teaspoon salt
Instructions
Step 1: Prepare the Shortbread Crust
- Preheat the oven to 350°F (175°C) and line a baking pan with parchment paper.
- In a mixing bowl, combine flour, butter, and sugar. Mix until crumbly.
- Press the mixture evenly into the bottom of the prepared pan.
- Bake for 15 minutes, until lightly golden.
Step 2: Make the Caramel Pecan Filling
- In a saucepan over medium heat, combine brown sugar, corn syrup, butter, and salt. Stir until melted and smooth.
- Remove from heat and stir in vanilla extract.
- In a separate bowl, whisk the eggs, then slowly add them to the caramel mixture, stirring constantly.
- Fold in the chopped pecans.
Step 3: Assemble and Bake
- Pour the pecan caramel filling over the baked crust, spreading evenly.
- Bake for 25-30 minutes, or until the filling is set and slightly firm to the touch.
- Let cool completely before slicing into bars.
Notes
- Use Fresh Pecans: Toasting them beforehand enhances the flavor.
- Don’t Overbake: The bars should be slightly firm but still have a gooey center.
- Cool Before Cutting: This helps the caramel set properly and prevents messy slices.
