Ingredients

Scale

For the Shortbread Crust:

  • 1 cup all-purpose flour (125g)
  • ½ cup unsalted butter, softened (113g)
  • ¼ cup granulated sugar (50g)

For the Caramel Pecan Filling:

  • ¾ cup brown sugar, packed (150g)
  • ½ cup light corn syrup (120ml)
  • 2 tablespoons unsalted butter (30g)
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 ½ cups chopped pecans (150g)
  • ¼ teaspoon salt

Instructions

Step 1: Prepare the Shortbread Crust

  1. Preheat the oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. In a mixing bowl, combine flour, butter, and sugar. Mix until crumbly.
  3. Press the mixture evenly into the bottom of the prepared pan.
  4. Bake for 15 minutes, until lightly golden.

Step 2: Make the Caramel Pecan Filling

  1. In a saucepan over medium heat, combine brown sugar, corn syrup, butter, and salt. Stir until melted and smooth.
  2. Remove from heat and stir in vanilla extract.
  3. In a separate bowl, whisk the eggs, then slowly add them to the caramel mixture, stirring constantly.
  4. Fold in the chopped pecans.

Step 3: Assemble and Bake

  1. Pour the pecan caramel filling over the baked crust, spreading evenly.
  2. Bake for 25-30 minutes, or until the filling is set and slightly firm to the touch.
  3. Let cool completely before slicing into bars.

Notes

  • Use Fresh Pecans: Toasting them beforehand enhances the flavor.
  • Don’t Overbake: The bars should be slightly firm but still have a gooey center.
  • Cool Before Cutting: This helps the caramel set properly and prevents messy slices.
