  • 1 tablespoon avocado oil or grapeseed oil
  • 1 large white onion, diced
  • 1 green bell pepper, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 2 cups chopped okra (fresh or frozen)

Spices & Seasonings:

  • 1 tablespoon smoked paprika
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon oregano
  • ½ teaspoon cayenne pepper (adjust to taste)
  • 1 tablespoon Cajun seasoning
  • Salt and black pepper, to taste

Plant Proteins:

  • 2 cups oyster mushrooms or portobello mushrooms, chopped
  • 1 teaspoon jerk seasoning (optional)

Liquids & Thickeners:

  • 1 tablespoon chickpea flour (or gluten-free flour)
  • 4 cups vegetable broth
  • 1 tablespoon coconut aminos or tamari

Grains:

  • 1 cup cooked brown rice or wild rice
  • Chopped green onions and parsley, for garnish

Instructions

  1. Build the Base: Heat oil in a large pot. Sauté onion, celery, and bell pepper until soft (7 minutes). Add garlic and cook 1 minute.
  2. Add Spices: Stir in paprika, onion powder, garlic powder, thyme, oregano, cayenne, and Cajun seasoning. Coat vegetables well.
  3. Create Vegan Roux: Add chickpea flour and stir constantly for 2–3 minutes until lightly toasted.
  4. Add Mushrooms & Okra: Stir in mushrooms and okra. Sprinkle jerk seasoning if using. Cook 5 minutes.
  5. Simmer: Add vegetable broth and coconut aminos. Bring to a simmer and cook uncovered 25–30 minutes until thickened.
  6. Taste & Adjust: Adjust salt, pepper, and cayenne to taste.
  7. Serve: Spoon over rice, garnish with parsley and green onions, and enjoy hot.

  • Don’t skip okra—it naturally thickens the gumbo.
  • For added protein, stir in lentils or chickpeas.
  • A splash of coconut milk at the end makes it creamy.
