  • 2 large leeks, cleaned and thinly sliced into half moons

  • 2 cans (15 oz) butter beans, drained and rinsed
  • ¾ cup vegetable broth
  • Zest and juice of ½ lemon
  • Optional garnishes: chopped parsley, chili flakes

Instructions

  1. Trim the dark green parts and roots of the leeks. Slice lengthwise and rinse thoroughly to remove dirt, then cut into thin half moons.
  2. Heat olive oil in a large pan over medium heat. Add sliced leeks and a pinch of salt. Sauté for 8–10 minutes until softened and lightly caramelized.
  3. Add garlic, paprika, and cumin. Stir and cook for 1–2 minutes until fragrant.
  4. Stir in butter beans and vegetable broth. Let simmer for 10 minutes to meld flavors and slightly thicken.
  5. Stir in lemon zest and juice. Season with salt and pepper to taste.
  6. Serve hot, garnished with chopped parsley and chili flakes if desired.
