- 2 large leeks, cleaned and thinly sliced into half moons

- 2 cans (15 oz) butter beans, drained and rinsed
- ¾ cup vegetable broth
- Zest and juice of ½ lemon
- Optional garnishes: chopped parsley, chili flakes
Instructions
- Trim the dark green parts and roots of the leeks. Slice lengthwise and rinse thoroughly to remove dirt, then cut into thin half moons.
- Heat olive oil in a large pan over medium heat. Add sliced leeks and a pinch of salt. Sauté for 8–10 minutes until softened and lightly caramelized.
- Add garlic, paprika, and cumin. Stir and cook for 1–2 minutes until fragrant.
- Stir in butter beans and vegetable broth. Let simmer for 10 minutes to meld flavors and slightly thicken.
- Stir in lemon zest and juice. Season with salt and pepper to taste.
- Serve hot, garnished with chopped parsley and chili flakes if desired.
