- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup (226g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
For the Frosting & Decoration:
- 2 cups (240g) powdered sugar
- 2 tablespoons (30ml) milk
- 1 teaspoon vanilla extract
- Pink food coloring
- Mini marshmallows (for bunny tails)
- Pink candy melts or pink icing (for paw details)
- White sprinkles (optional, for extra decoration)
Instructions
Step 1: Make the Sugar Cookie Dough
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate large bowl, beat butter and sugar until light and fluffy (about 2 minutes).
- Mix in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
Step 2: Roll & Cut the Cookies
- Lightly flour a clean surface and roll out the dough to about ¼-inch thick.
- Use a round cookie cutter (about 2 inches) for the bunny butts.
- Use an oval or small circle cutter for the bunny feet (two per cookie).
- Place the cut-out cookies on a parchment-lined baking sheet.
Step 3: Bake the Cookies
- Preheat oven to 350°F (175°C).
- Bake for 8-10 minutes, or until the edges are lightly golden.
- Let cool completely before decorating.
Step 4: Make the Frosting
- In a bowl, mix powdered sugar, milk, and vanilla extract until smooth.
- Divide the icing into two bowls. Leave one white and tint the other with pink food coloring.
Step 5: Decorate the Bunny Butt Cookies
- Frost the round cookie (bunny butt) with white icing and let set.
- Attach the two oval feet to the bottom using icing.
- Pipe or spread pink icing onto the feet to create paw pads.
- Add a mini marshmallow in the center as the fluffy bunny tail.
- Let the cookies set for about 30 minutes before serving.
Notes
- Chill the dough – This helps prevent spreading while baking.
- Use gel food coloring – It gives more vibrant colors without altering icing texture.
- Let frosting dry before stacking – To avoid smudging decorations.
