Ingredients
- 1 sleeve (9 sheets) graham crackers, broken in half
- ¾ cup creamy peanut butter
- ¼ cup butter, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup semi-sweet or milk chocolate chips
- 1 tablespoon coconut oil or butter (for smooth melting)
Instructions
In a medium bowl, mix the peanut butter, softened butter, powdered sugar, and vanilla until smooth and creamy. The mixture should be thick but spreadable.
Break each graham cracker sheet in half to create squares. Spread a layer of the peanut butter mixture (about 1 tablespoon) onto one half, then top with another graham cracker to form a sandwich. Repeat until all are assembled.
Place the sandwiches on a parchment-lined tray.
In a microwave-safe bowl, melt the chocolate chips and coconut oil in 20-second bursts, stirring between each until smooth and fully melted.
Dip each sandwich halfway into the melted chocolate, or use a spoon to drizzle over the tops. Return to the tray and sprinkle with sea salt if desired.
