For the Meatloaf:

  • 2 lbs (900g) ground beef (80/20)
  • 2 large eggs
  • 1 cup (240ml) whole milk
  • 1 1/2 cups (150g) plain breadcrumbs
  • 1 medium yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tbsp fresh parsley, chopped
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil (for sautéing)

For the Brown Gravy:

  • 4 tbsp (60g) unsalted butter
  • 4 tbsp (30g) all-purpose flour
  • 3 cups (720ml) low-sodium beef broth
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Optional: 1 tsp soy sauce

Instructions

  1. Preheat oven: Heat oven to 375°F (190°C). Grease a loaf pan or line a baking sheet with parchment.
  2. Sauté aromatics: Heat olive oil in a pan. Cook onion for 5 minutes until soft, then add garlic and cook 1 more minute. Let cool.
  3. Mix meatloaf: In a large bowl, combine beef, breadcrumbs, milk, eggs, Worcestershire, parsley, cooled onion/garlic, salt, and pepper. Mix gently.
  4. Shape and bake: Transfer mixture into loaf pan and shape into loaf. Bake 55–65 minutes or until internal temperature reaches 160°F (71°C). Rest 10 minutes.
  5. Make gravy: In a saucepan, melt butter. Whisk in flour and cook 2–3 minutes. Slowly whisk in broth, then add onion powder, garlic powder, salt, pepper, and soy sauce if using. Simmer 5–7 minutes until thickened.
  6. Serve: Slice meatloaf and spoon warm gravy over each slice. Garnish with parsley if desired.
