  • 12 tbsp oil (avocado, olive, or mustard)
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder (adjust to taste)
  • ½ tsp garam masala
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)
  • Optional: minced garlic, ginger, green chilies, lemon juice

Instructions

  1. Prep the Potatoes: Boil potatoes until fork-tender, peel, and cube. You can also use leftover roasted or air-fried potatoes.
  2. Sauté the Spices: Heat oil in a pan. Add cumin and mustard seeds. Let them crackle to release aroma.
  3. Add the Seasonings: Add turmeric, chili powder, and garam masala. Sauté 30–40 seconds until fragrant. Add garlic and ginger if using.
  4. Toss the Potatoes: Add cubed potatoes and coat well in the spice mix. Cook 6–8 minutes, stirring occasionally, until crispy and golden.
