8 oz rice noodles (or any noodles you prefer)

For the sauce:
⅓ cup creamy peanut butter
3 tablespoons soy sauce (or tamari for gluten-free)
2 tablespoons maple syrup or honey
1 tablespoon rice vinegar or lime juice
12 teaspoons chili garlic sauce (adjust to taste)
1 teaspoon toasted sesame oil
23 tablespoons hot water (to thin the sauce)

Instructions

Step 1: Cook the noodles
Bring a large pot of water to a boil. Cook your rice noodles (or other pasta) according to package instructions. Drain and rinse with cold water to prevent sticking. Set aside.

Step 2: Make the sauce
In a mixing bowl, combine the peanut butter, soy sauce, maple syrup, rice vinegar, sesame oil, and chili garlic sauce. Whisk until smooth. Add 2 to 3 tablespoons of hot water to thin it out to your desired consistency.

Taste and adjust—more vinegar for tang, more chili garlic sauce for heat, or more syrup for sweetness.

Step 3: Toss the noodles
Add the drained noodles to a large bowl. Pour the sauce over and use tongs to toss until every strand is coated.

Step 4: Garnish and serve
Top with your favorite garnishes: sliced scallions, sesame seeds, crushed peanuts, or fresh herbs. Serve warm or chilled.

Notes

Start with room temperature peanut butter to make mixing easier. If your sauce seems too thick, slowly add hot water until it’s pourable. Always taste and tweak—the beauty of this sauce is how adaptable it is.

For more spice, add extra chili garlic sauce or a pinch of red pepper flakes. For more depth, toss in a dash of garlic powder or grated fresh ginger. If you love umami, a splash of hoisin or miso adds a new dimension.
