Instructions

  1. Prepare the Rice: Cook rice and let cool completely on a baking sheet. Gently stir in rice vinegar, sugar, and salt.
  2. Form Patties: Lightly oil your hands and form cooled rice into small, flat rectangles about 1/2 inch thick. Place on a plate or tray.
  3. Cook Until Crispy: Heat vegetable oil in a skillet over medium-high. Cook rice rectangles in batches, about 3–4 minutes per side, until golden and crispy. Drain on paper towels.
