- 1 teaspoon sugar
- Pinch of salt
- 2 tablespoons vegetable oil (for frying)

- Sliced avocado or pickled vegetables
- Green onions, thinly sliced

Instructions
- Prepare the Rice: Cook rice and let cool completely on a baking sheet. Gently stir in rice vinegar, sugar, and salt.
- Form Patties: Lightly oil your hands and form cooled rice into small, flat rectangles about 1/2 inch thick. Place on a plate or tray.
- Cook Until Crispy: Heat vegetable oil in a skillet over medium-high. Cook rice rectangles in batches, about 3–4 minutes per side, until golden and crispy. Drain on paper towels.
Notes
- Cool rice fully before shaping to prevent crumbling.
- Cook in batches and avoid overcrowding the pan.
- Use a non-stick or cast-iron skillet for best results.
- For air fryer: spray patties with oil and cook at 400°F (200°C) for 10–12 minutes, flipping halfway.
