If you’re looking for a quick, sweet, and fluffy breakfast option, these Blueberry Sweet Biscuits are a must-try!

Ingredients

Scale

For the Biscuits:

  • 2 cups all-purpose flour (or Bisquick for an easy version)
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, cold & cubed
  • ¾ cup buttermilk (or milk with 1 tsp vinegar)
  • 1 cup fresh or frozen blueberries

For the Sweet Glaze (Optional):

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

Step 1: Prepare the Dough

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, baking powder, salt, and sugar.
  3. Cut in the cold butter using a pastry cutter or fork until the mixture looks like coarse crumbs.
  4. Slowly add buttermilk, mixing until a dough forms.
  5. Gently fold in blueberries, being careful not to overmix.

Step 2: Shape the Biscuits

  1. Lightly flour a surface and roll out the dough to about ½-inch thick.
  2. Cut into round biscuits using a cutter or shape into square biscuits with a knife.
  3. Place biscuits on the prepared baking sheet, leaving space between them.

Step 3: Bake the Biscuits

  1. Bake for 15-18 minutes, until golden brown.
  2. Let cool for 5 minutes before adding the glaze.

Step 4: Make the Sweet Glaze & Serve

  1. Whisk together powdered sugar, milk, and vanilla extract until smooth.
  2. Drizzle over warm biscuits and enjoy!

Notes

  • Use cold butter – Keeps the biscuits flaky and tender.
  • Don’t overmix the dough – Too much mixing makes the biscuits dense.
  • Use frozen blueberries – If using, don’t thaw to prevent color bleeding.
