Scale
For the Biscuits:
- 2 cups all-purpose flour (or Bisquick for an easy version)
- 1 tablespoon baking powder
- ½ teaspoon salt
- ¼ cup granulated sugar
- ½ cup unsalted butter, cold & cubed
- ¾ cup buttermilk (or milk with 1 tsp vinegar)
- 1 cup fresh or frozen blueberries
For the Sweet Glaze (Optional):
- 1 cup powdered sugar
- 2 tablespoons milk
- ½ teaspoon vanilla extract
Instructions
Step 1: Prepare the Dough
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together flour, baking powder, salt, and sugar.
- Cut in the cold butter using a pastry cutter or fork until the mixture looks like coarse crumbs.
- Slowly add buttermilk, mixing until a dough forms.
- Gently fold in blueberries, being careful not to overmix.
Step 2: Shape the Biscuits
- Lightly flour a surface and roll out the dough to about ½-inch thick.
- Cut into round biscuits using a cutter or shape into square biscuits with a knife.
- Place biscuits on the prepared baking sheet, leaving space between them.
Step 3: Bake the Biscuits
- Bake for 15-18 minutes, until golden brown.
- Let cool for 5 minutes before adding the glaze.
Step 4: Make the Sweet Glaze & Serve
- Whisk together powdered sugar, milk, and vanilla extract until smooth.
- Drizzle over warm biscuits and enjoy!
Notes
- Use cold butter – Keeps the biscuits flaky and tender.
- Don’t overmix the dough – Too much mixing makes the biscuits dense.
- Use frozen blueberries – If using, don’t thaw to prevent color bleeding.
