  • 1 cup unsalted butter, melted

For the filling:

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups fresh or frozen blueberries
  • 2 tbsp cornstarch (optional, if blueberries are very juicy)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a mixing bowl, combine flour, oats (if using), sugar, baking powder, salt, and melted butter. Press half the mixture into the pan for the crust.
  3. In another bowl, beat softened cream cheese, sugar, egg, and vanilla until smooth. Spread over the crust.
  4. Toss blueberries with cornstarch, then sprinkle evenly over the cream cheese layer.
  5. Crumble the remaining crust mixture over the blueberries.
  6. Bake 35–40 minutes, until the top is golden and the cream cheese is set.
  7. Cool completely, then chill at least 2 hours before cutting into bars.

  • Use fresh blueberries in season; frozen also work (coat with cornstarch).
