  • ¼ teaspoon cinnamon (optional)
  • ¼ cup shredded mozzarella or mild cheddar cheese
  • 1 teaspoon butter or coconut oil (for cooking)
  • Powdered sugar or extra honey (for topping, optional)

Instructions

Step 1: Prepare the Filling

  1. In a small bowl, mix cream cheese (or Greek yogurt) with honey and cinnamon until smooth.
  2. Spread the mixture evenly over one half of the tortilla.
  3. Sprinkle shredded cheese on top, then add blueberries.

Step 2: Assemble the Quesadilla

  1. Fold the tortilla in half to cover the filling.
  2. Press down gently to keep everything together.

Step 3: Cook the Quesadilla

  1. Heat butter or coconut oil in a non-stick skillet over medium heat.
  2. Place the quesadilla in the pan and cook for 2-3 minutes per side, until golden brown and crispy.
  3. Remove from heat and let sit for 1 minute before slicing.

Step 4: Serve & Enjoy

  1. Cut into triangles and dust with powdered sugar or drizzle with honey.
  2. Serve warm with a side of yogurt, fresh fruit, or whipped cream.

Notes

  • Use fresh blueberries – They hold their shape better than frozen.
  • Don’t overfill the tortilla – Keeps it from becoming soggy.
  • Cook on medium heat – Prevents burning while allowing cheese to melt.
