  • 4 large eggs

Instructions

  1. Prepare crust: Preheat oven to 325°F (163°C). Mix cookie crumbs, sugar, and melted butter. Press firmly into a greased 9-inch springform pan. Bake 10 minutes, then cool.
  2. Make filling: Beat softened cream cheese until smooth. Add sugar, vanilla, sour cream, and heavy cream. Blend well. Mix in black cocoa powder until incorporated. Add eggs one at a time, mixing gently until just combined.
  3. Assemble: Pour filling over cooled crust. Wrap outside of springform pan in foil. Place in a roasting pan and add hot water halfway up the sides for a water bath.
  4. Bake: Bake 60–70 minutes until edges are set and center is slightly jiggly. Turn off oven, crack door, and rest for 1 hour.
  5. Chill: Cool completely at room temp, then refrigerate at least 4 hours or overnight before serving.
