- Pie Crust:
- 1 (9-inch) deep-dish pie shell, store-bought or homemade
Instructions
- Boil the potatoes: Place peeled and chopped purple sweet potatoes in a pot of cold water. Bring to a boil and cook for 20–25 minutes or until fork-tender. Drain and cool slightly.
- Mash and mix: Mash potatoes until smooth. Add melted butter, sugars, eggs, cinnamon, nutmeg, vanilla, and salt. Mix until creamy.
- Add milk: Pour in evaporated milk gradually, stirring until smooth and silky.
- Fill the crust: Pour mixture into your pie shell and smooth the top evenly.
- Bake: Bake at 350°F (175°C) for 55–65 minutes, until set and a toothpick inserted comes out clean. Cover edges with foil if needed.
- Cool and chill: Let cool on a rack, then refrigerate for 2 hours before serving for best texture.
