Instructions

  1. Boil the potatoes: Place peeled and chopped purple sweet potatoes in a pot of cold water. Bring to a boil and cook for 20–25 minutes or until fork-tender. Drain and cool slightly.
  2. Mash and mix: Mash potatoes until smooth. Add melted butter, sugars, eggs, cinnamon, nutmeg, vanilla, and salt. Mix until creamy.
  3. Add milk: Pour in evaporated milk gradually, stirring until smooth and silky.
