  • 1/2 cup powdered erythritol
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp vanilla extract
  • Candy eyes (sugar-free if possible)
  • Black licorice or thin chocolate sticks (for whiskers)
  • Sugar-free chocolate cookies or almond slices (for ears)

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a bowl, whisk almond flour, coconut flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a large bowl, beat softened butter and erythritol until fluffy. Add eggs one at a time, then vanilla.
  4. Gradually add dry ingredients, alternating with almond milk, mixing until smooth.
  5. Fill cupcake liners 2/3 full and bake 18–20 minutes, until a toothpick comes out clean. Cool completely.
  6. For frosting: Beat butter, cream cheese, powdered erythritol, cocoa powder, and vanilla until creamy.
  7. Frost cooled cupcakes. Add candy eyes, licorice whiskers, and cookie/almond slice ears to create cat faces.
