- 1/2 cup powdered erythritol
- 2 tbsp unsweetened cocoa powder
- 1 tsp vanilla extract
- Candy eyes (sugar-free if possible)
- Black licorice or thin chocolate sticks (for whiskers)
- Sugar-free chocolate cookies or almond slices (for ears)
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a bowl, whisk almond flour, coconut flour, cocoa powder, baking powder, baking soda, and salt.
- In a large bowl, beat softened butter and erythritol until fluffy. Add eggs one at a time, then vanilla.
- Gradually add dry ingredients, alternating with almond milk, mixing until smooth.
- Fill cupcake liners 2/3 full and bake 18–20 minutes, until a toothpick comes out clean. Cool completely.
- For frosting: Beat butter, cream cheese, powdered erythritol, cocoa powder, and vanilla until creamy.
- Frost cooled cupcakes. Add candy eyes, licorice whiskers, and cookie/almond slice ears to create cat faces.
