Ingredients
2 tablespoons olive oil 1 medium onion, diced 2 carrots, diced 2 celery stalks, diced 4 cloves garlic, minced 2 cans (15 oz each) cannellini beans, drained and rinsed 6 cups vegetable broth 4 cups baby spinach, roughly chopped 1 sprig fresh rosemary (or 1/2 teaspoon dried) 2 sprigs fresh thyme (or 1/2 teaspoon dried) 1 tablespoon lemon juice Salt and black pepper, to taste Fresh parsley, for garnish Optional: cooked shredded chicken, cooked orzo, diced potatoes
Instructions
1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook for 5–7 minutes until softened. 2. Add garlic and cook for another 30 seconds. 3. Stir in cannellini beans, vegetable broth, rosemary, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes. 4. Stir in spinach and cook until wilted, about 2–3 minutes. 5. Remove from heat, stir in lemon juice, and adjust seasoning to taste. 6. Ladle into bowls, garnish with fresh parsley and black pepper, and serve warm.
