For the Casserole:

  • 1 loaf (14-16 oz) French bread or brioche, cut into cubes
  • 6 large eggs
  • 2 cups (480ml) whole milk
  • ½ cup (120ml) heavy cream
  • ½ cup (100g) granulated sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 cup (150g) mixed berries (strawberries, blueberries, raspberries)

For the Streusel Topping:

  • ½ cup (65g) all-purpose flour
  • ¼ cup (50g) brown sugar
  • ½ teaspoon cinnamon
  • ¼ cup (60g) unsalted butter, melted

For Serving (Optional):

  • Powdered sugar
  • Maple syrup
  • Whipped cream

Instructions

Step 1: Prepare the Bread & Berries

  1. Cut the French bread or brioche into bite-sized cubes.
  2. Grease a 9×13-inch baking dish and spread half of the bread cubes evenly.
  3. Sprinkle half of the mixed berries over the bread. Add the remaining bread and top with the rest of the berries.

Step 2: Make the Custard Mixture

  1. In a large bowl, whisk together eggs, milk, heavy cream, sugar, vanilla extract, and cinnamon.
  2. Pour the mixture evenly over the bread and berries, pressing down gently to absorb.

Step 3: Prepare the Streusel Topping

  1. In a small bowl, mix flour, brown sugar, and cinnamon.
  2. Stir in melted butter until the mixture resembles coarse crumbs.
  3. Sprinkle evenly over the casserole.

Step 4: Refrigerate or Bake

  • Overnight Option: Cover and refrigerate for at least 4 hours or overnight.
  • Bake Immediately: Preheat oven to 350°F (175°C) and let the casserole sit at room temperature for 20 minutes before baking.

Step 5: Bake & Serve

  1. Bake uncovered for 40-45 minutes until golden brown and slightly crisp on top.
  2. Let cool for 5 minutes, then dust with powdered sugar and serve with maple syrup or whipped cream.

Notes

  • Use stale bread – Day-old bread absorbs the custard better without getting soggy.
  • Make it extra crispy – Bake uncovered for the last 10 minutes.
