Berry Croissant Breakfast Bake : Easy Brunch Recipe

If you love flaky croissants, juicy berries, and creamy custard, this Berry Croissant Breakfast Bake is the perfect dish for you!

Ingredients

Scale

For the Croissant Bake:

  • 6 buttery croissants, torn into pieces
  • 1 ½ cups mixed berries (strawberries, blueberries, raspberries)
  • 4 large eggs
  • 1 cup milk (whole milk preferred)
  • ½ cup heavy cream
  • ½ cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt

For the Topping (Optional):

  • ¼ cup powdered sugar (for dusting)
  • ½ cup maple syrup or honey
  • ¼ cup sliced almonds (for crunch)

Instructions

Step 1: Prepare the Baking Dish

Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.

Step 2: Tear the Croissants

Tear the croissants into large chunks and spread them evenly in the baking dish.

Step 3: Add the Berries

Sprinkle the mixed berries evenly over the croissants.

Step 4: Make the Custard

In a large mixing bowl, whisk together eggs, milk, heavy cream, sugar, vanilla extract, cinnamon, and salt until smooth.

Step 5: Pour Over the Croissants

Slowly pour the custard mixture over the croissants, pressing them down slightly so they absorb the liquid. Let sit for 10 minutes to allow the flavors to meld.

Step 6: Bake

Bake uncovered for 35-40 minutes, or until golden brown and set.

Step 7: Serve and Enjoy!

Let the bake cool for 5 minutes, then dust with powdered sugar, drizzle with maple syrup, and sprinkle with sliced almonds for extra texture. Serve warm and enjoy!

Notes

Use Day-Old Croissants – Slightly stale croissants absorb the custard better, giving the dish a rich texture.
Let the Custard Soak In – Allow at least 10 minutes before baking to ensure the croissants soak up the custard.
Bake Until Golden – A crispy top with a soft center makes the perfect texture.
