Ingredients
Scale
- 2 lbs beef tenderloin tips, cut into bite-sized pieces
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 2 tablespoons flour
- 1 ½ cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 tablespoon soy sauce
- 1 tablespoon butter (optional)
- Fresh parsley, for garnish
- Optional: mashed potatoes, egg noodles, or rice for serving
Instructions
- Sear the Beef: Heat oil in a skillet over medium-high. Season beef with salt and pepper. Sear in batches until browned, about 2–3 minutes per side. Remove and set aside.
- Sauté Aromatics: Add onion to the skillet and cook 2–3 minutes. Add garlic and mushrooms. Cook 5 minutes until softened.
- Create the Gravy: Sprinkle flour over vegetables and cook 1 minute. Slowly whisk in beef broth. Add soy sauce, Worcestershire, and thyme. Simmer 5–7 minutes until thickened.
- Simmer the Beef: Return beef to the skillet. Reduce heat and simmer 15–20 minutes until tender and flavors meld.
- Finish the Sauce: Stir in butter for extra richness. Adjust seasoning as needed. Garnish with fresh parsley.
- Serve: Enjoy over mashed potatoes, buttered noodles, or rice.
Slow Cooker Version:
- Sear beef and sauté vegetables as above.
- Transfer everything to a slow cooker and add broth, soy sauce, Worcestershire, and thyme.
- Cook on low 6–7 hours or high 3–4 hours.
- Thicken with a flour slurry 30 minutes before serving.
Notes
- Use tenderloin or well-marbled beef for best results.
- Don’t skip searing—it adds deep flavor.
- Simmer gently to keep beef tender.
- Add a splash of cream or cashew milk for a richer gravy.
- Great with mashed potatoes, egg noodles, rice, or polenta.
- Leftovers reheat well and can be frozen up to 2 months.
