Instructions

  1. Sear the Beef: Heat oil in a skillet over medium-high. Season beef with salt and pepper. Sear in batches until browned, about 2–3 minutes per side. Remove and set aside.
  2. Sauté Aromatics: Add onion to the skillet and cook 2–3 minutes. Add garlic and mushrooms. Cook 5 minutes until softened.
  3. Create the Gravy: Sprinkle flour over vegetables and cook 1 minute. Slowly whisk in beef broth. Add soy sauce, Worcestershire, and thyme. Simmer 5–7 minutes until thickened.
  4. Simmer the Beef: Return beef to the skillet. Reduce heat and simmer 15–20 minutes until tender and flavors meld.

Slow Cooker Version:

  1. Sear beef and sauté vegetables as above.
