1 pound ground beef (or ground turkey if preferred)
1 small onion, chopped
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, undrained
1 can (6 oz) tomato paste
1 teaspoon Italian seasoning
Salt and black pepper to taste
2 cups uncooked egg noodles
1 cup sour cream
1 cup cottage cheese
1½ cups shredded sharp cheddar cheese
1 tablespoon chopped fresh parsley (optional)


Instructions

In a large skillet over medium heat, cook the ground beef with the chopped onion until fully browned. Drain off any excess fat, then stir in the garlic, diced tomatoes, tomato paste, Italian seasoning, salt, and pepper. Let the mixture simmer on low heat for about 10 minutes.

While the meat simmers, cook the egg noodles in a separate pot according to the package instructions. Drain and set aside.

In a medium bowl, mix together the sour cream and cottage cheese until smooth. This will become your creamy layer.

To assemble the casserole, start with a layer of half the noodles in the bottom of the baking dish. Spoon half of the meat mixture on top, followed by half of the sour cream and cottage cheese mixture. Repeat the layers one more time.

Top everything with shredded cheddar cheese and cover the dish with foil.

Bake covered for 20 minutes, then remove the foil and bake for another 10–15 minutes, until the cheese is golden and bubbly.
