For the Noodles and Stir-Fry:

  • 12 oz (340 g) fresh Lo Mein noodles or Chinese egg noodles
  • 2 tbsp vegetable oil
  • 2 garlic cloves, minced
  • 1 cup carrots, julienned
  • 1 cup bell peppers, sliced
  • 1 cup cabbage or bok choy, shredded
  • 1/2 cup scallions, cut into 2-inch pieces

Instructions

  1. Marinate the Beef: Mix sliced beef with cornstarch, soy sauce, and sesame oil. Let rest 10–15 minutes.
  2. Cook the Noodles: Boil until just underdone, drain, and set aside.
  3. Prepare the Sauce: Combine soy sauce, dark soy sauce, oyster sauce, sugar, and sesame oil in a bowl.
  4. Stir-Fry the Beef: Heat oil in a wok, sear beef until just cooked, then remove.
  5. Cook Vegetables: In the same wok, sauté garlic, carrots, peppers, and cabbage for 2–3 minutes.
  6. Toss Together: Add noodles, beef, and sauce back to wok. Toss until evenly coated. Garnish with scallions and serve.
