For the Beef Marinade:

- 1 tbsp dark soy sauce
- 1 tbsp oyster sauce
- 1 tsp sugar
- 1/2 tsp sesame oil
For the Noodles and Stir-Fry:
- 12 oz (340 g) fresh Lo Mein noodles or Chinese egg noodles
- 2 tbsp vegetable oil
- 2 garlic cloves, minced
- 1 cup carrots, julienned
- 1 cup bell peppers, sliced
- 1 cup cabbage or bok choy, shredded
- 1/2 cup scallions, cut into 2-inch pieces
Instructions
- Marinate the Beef: Mix sliced beef with cornstarch, soy sauce, and sesame oil. Let rest 10–15 minutes.
- Cook the Noodles: Boil until just underdone, drain, and set aside.
- Prepare the Sauce: Combine soy sauce, dark soy sauce, oyster sauce, sugar, and sesame oil in a bowl.
- Stir-Fry the Beef: Heat oil in a wok, sear beef until just cooked, then remove.
- Cook Vegetables: In the same wok, sauté garlic, carrots, peppers, and cabbage for 2–3 minutes.
- Toss Together: Add noodles, beef, and sauce back to wok. Toss until evenly coated. Garnish with scallions and serve.
