  • ⅓ cup plain Greek yogurt (or light mayo)
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha sauce (adjust to taste)
  • 1 tbsp honey
  • 1 tsp rice vinegar or lime juice
  • 2 spring onions, finely chopped
  • Optional Garnish: red chili flakes, chopped cilantro, toasted sesame seeds

Instructions

  1. Cook the Pasta: Boil water in a large pot and cook pasta according to package directions until al dente. Drain and reserve a little pasta water.
  2. Cook the Chicken: Season chicken with garlic powder, salt, and pepper. Heat olive oil in a skillet and cook until golden and fully cooked (6–8 minutes). Remove from pan.
  3. Prepare the Sauce: In a bowl, whisk together Greek yogurt, sweet chili sauce, sriracha, honey, and rice vinegar until smooth.
  4. Combine: Return chicken and pasta to the skillet, pour in the sauce, and toss well to coat. Add a splash of reserved pasta water to loosen if needed.
  5. Serve: Garnish with chopped spring onions, chili flakes, or sesame seeds. Enjoy hot or store for meal prep.
