For the Bang Bang Sauce:

  • 1/3 cup mayonnaise (regular or light)
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust to your spice preference)
  • 1 teaspoon honey
  • Optional: 1 teaspoon rice vinegar for tang

For the Bowls:

  • 2 cups cooked rice (white, brown, or jasmine) or noodles
  • 1 cup shredded carrots
  • 1 cup shredded red cabbage or romaine lettuce
  • 1 cucumber, sliced
  • 2 green onions, chopped
  • Optional toppings: sesame seeds, cilantro, avocado slices

Instructions

Step 1: Cook your base
Prepare rice or noodles according to package directions. Set aside and keep warm.

Step 2: Cook the chicken
Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Add ground chicken, breaking it up with a spatula as it cooks. Season with salt, pepper, and soy sauce or sesame oil if using. Cook until browned and cooked through, about 6–8 minutes.

Step 3: Make the Bang Bang sauce
In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar. Adjust spice level to taste.

Step 4: Assemble the bowls
Divide the rice or noodles among four serving bowls. Top each with cooked chicken, shredded vegetables, cucumber slices, and green onions. Drizzle with Bang Bang sauce and finish with your favorite garnishes like sesame seeds or avocado.
