  • ½ cup banana pudding mix (dry, not prepared)
  • 4 oz cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk (if needed, for texture)
  • 10 oz white chocolate chips or candy melts
  • 1 tablespoon coconut oil (optional, for smoother melting)
  • ¼ cup crushed vanilla wafers (for garnish)
  • 1 teaspoon banana chips, crushed (optional)

Instructions

Step 1: Prepare the Truffle Mixture

  1. Crush vanilla wafers into fine crumbs using a food processor.
  2. In a mixing bowl, combine wafer crumbs, dry banana pudding mix, cream cheese, and vanilla extract.
  3. Mix until a soft, dough-like consistency forms. If the mixture is too dry, add 1 tablespoon of milk.

Step 2: Shape & Chill the Truffles

  1. Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
  2. Freeze for 20-30 minutes to firm up.

Step 3: Melt the White Chocolate

  1. In a microwave-safe bowl, melt white chocolate chips with coconut oil in 30-second intervals, stirring in between until smooth.

Step 4: Coat the Truffles

  1. Using a fork or toothpick, dip each truffle into the melted chocolate.
  2. Let excess chocolate drip off before placing it back on the parchment paper.

Step 5: Garnish & Set

  1. Sprinkle with crushed vanilla wafers or banana chips while the coating is still wet.
  2. Let the truffles set at room temperature for 30 minutes, or refrigerate for faster results.
