- Prepare the Crust: Preheat the oven to 325°F (163°C). Combine graham cracker crumbs (or vanilla wafer crumbs) with sugar. Stir in melted butter until the mixture is moist. Press it into the bottom of a springform pan and bake for 10 minutes. Let it cool.
- Make the Cheesecake Filling: Using an electric mixer, beat the softened cream cheese with sugar until smooth. Add sour cream and vanilla extract. Beat in eggs one at a time, mixing well.
- Bake the Cheesecake: Pour the cheesecake mixture over the cooled crust and bake for 55-60 minutes at 325°F (163°C) until the center is set but slightly jiggly. Cool in the oven with the door ajar for 1 hour, then refrigerate for at least 4 hours or overnight.
- Prepare the Banana Pudding Layer: In a bowl, whisk the banana pudding mix with cold milk until thickened. In another bowl, whip the heavy cream until stiff peaks form. Fold the whipped cream into the pudding mixture.
- Assemble the Cheesecake: Spread the banana pudding layer over the chilled cheesecake. Garnish with fresh banana slices and whipped cream (optional). Refrigerate for 2-3 more hours.
