Instructions
Preheat your oven to 325°F (160°C). In a bowl, mix the graham cracker crumbs, brown sugar, and melted butter until the mixture resembles wet sand. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove and set aside to cool.
In a large mixing bowl, beat the cream cheese until smooth. Add sugar and mix until well combined. Beat in the eggs one at a time. Stir in mashed bananas, vanilla extract, sour cream, cinnamon, and salt. Mix until the batter is smooth and creamy.
Pour the filling over the crust in the springform pan. Place the pan in a larger baking dish and fill it halfway with hot water to create a water bath. Bake for 60–70 minutes, or until the center is just set and slightly jiggly. Turn off the oven and let the cheesecake rest with the door ajar for 1 hour.
Remove the cheesecake from the oven and water bath. Chill in the refrigerator for at least 4 hours, preferably overnight. Before serving, drizzle with caramel sauce and sprinkle with chopped nuts. Add whipped cream and banana slices if desired.
