- 4 salmon fillets (about 6 oz each)
- 1 bunch asparagus, trimmed
- 3 tablespoons unsalted butter, melted
- 3 cloves garlic, minced
- 1 lemon, zested and juiced
- Salt and black pepper, to taste
- 1 teaspoon Italian seasoning
- Lemon slices, for garnish
- Fresh parsley, chopped (optional)
Instructions
- Preheat Oven: Preheat oven to 400°F (200°C). Cut four large sheets of aluminum foil.
- Make Garlic Lemon Butter: Mix melted butter, lemon juice, lemon zest, garlic, and Italian seasoning.
- Assemble Foil Packs: Place asparagus on foil, top with salmon, season with salt and pepper, and spoon butter mixture over top.
- Seal: Fold foil tightly into sealed packets.
- Bake: Place packets on a baking sheet and bake 18–20 minutes, until salmon flakes easily.
- Serve: Carefully open packets, garnish with parsley and lemon slices, and serve hot.
Notes
- Trim asparagus evenly so it cooks at the same rate as the salmon.
- Do not overcook—salmon should be moist and flaky.
- Fresh lemon juice and zest give the best flavor.
- Foil packs can also be cooked on the grill over medium heat.
