Description

Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 1 bunch asparagus, trimmed
  • 3 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced
  • Salt and black pepper, to taste
  • 1 teaspoon Italian seasoning
  • Lemon slices, for garnish
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat Oven: Preheat oven to 400°F (200°C). Cut four large sheets of aluminum foil.
  2. Make Garlic Lemon Butter: Mix melted butter, lemon juice, lemon zest, garlic, and Italian seasoning.
  3. Assemble Foil Packs: Place asparagus on foil, top with salmon, season with salt and pepper, and spoon butter mixture over top.
  4. Seal: Fold foil tightly into sealed packets.
  5. Bake: Place packets on a baking sheet and bake 18–20 minutes, until salmon flakes easily.
  6. Serve: Carefully open packets, garnish with parsley and lemon slices, and serve hot.

Notes

  • Trim asparagus evenly so it cooks at the same rate as the salmon.
  • Do not overcook—salmon should be moist and flaky.
  • Fresh lemon juice and zest give the best flavor.
  • Foil packs can also be cooked on the grill over medium heat.
