Instructions

- Make Roux: Add flour and stir constantly for 1–2 minutes until golden. Slowly whisk in chicken broth.
- Add Milk & Potatoes: Stir in milk and mashed potatoes. Simmer gently, stirring occasionally.
- Add Cheese & Sour Cream: Reduce heat and stir in cheese and sour cream. Mix until smooth. Season with salt and pepper.
- Serve: Ladle into bowls and top with desired toppings like bacon, cheese, or green onions.
