  • Olive oil spray
  • 1 cup marinara sauce
  • 1/2 cup shredded part-skim mozzarella cheese

Instructions

  1. Preheat oven: Heat oven to 425°F (218°C) and line a baking sheet with parchment or foil. Lightly coat with cooking spray.
  2. Prepare chicken: Slice breasts in half lengthwise for cutlets. Pound evenly and season both sides with salt and pepper.
  3. Set up breading: Whisk eggs and water in one shallow bowl. Mix breadcrumbs, Parmesan, Italian seasoning, and garlic powder in another.
  4. Bread chicken: Dip in egg, coat in breadcrumb mixture, and place on baking sheet (use a wire rack for extra crispiness).
  5. Bake: Spray lightly with olive oil. Bake 20 minutes, flipping halfway, until golden and cooked through.
  6. Add sauce & cheese: Spoon marinara over each piece, top with mozzarella, and return to oven 5 minutes until melted.
