- 2 large eggs
- 1 tablespoon water
- 3/4 cup seasoned breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1 teaspoon garlic powder
- Olive oil spray
- 1 cup marinara sauce
- 1/2 cup shredded part-skim mozzarella cheese
- Fresh basil or parsley for garnish (optional)
Instructions
- Preheat oven: Heat oven to 425°F (218°C) and line a baking sheet with parchment or foil. Lightly coat with cooking spray.
- Prepare chicken: Slice breasts in half lengthwise for cutlets. Pound evenly and season both sides with salt and pepper.
- Set up breading: Whisk eggs and water in one shallow bowl. Mix breadcrumbs, Parmesan, Italian seasoning, and garlic powder in another.
- Bread chicken: Dip in egg, coat in breadcrumb mixture, and place on baking sheet (use a wire rack for extra crispiness).
- Bake: Spray lightly with olive oil. Bake 20 minutes, flipping halfway, until golden and cooked through.
- Add sauce & cheese: Spoon marinara over each piece, top with mozzarella, and return to oven 5 minutes until melted.
- Serve: Garnish with basil or parsley and serve immediately.
