Baked Beef Chimichangas : Cheesy Mexican Favorite

For the Chimichangas:

  • 1 lb (450g) ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup (120ml) tomato sauce or salsa
  • 1 cup (100g) shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 6 large flour tortillas
  • 2 tablespoons melted butter (or olive oil for brushing)

For Serving (Optional):

  • Sour cream
  • Guacamole
  • Pico de gallo or salsa
  • Fresh cilantro
  • Lime wedges

Instructions

Step 1: Preheat & Prepare the Pan

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2: Cook the Beef Filling

  1. Heat a large skillet over medium heat.
  2. Add ground beef and chopped onion, cooking until beef is browned and onion is soft (about 5 minutes).
  3. Drain excess grease, then stir in garlic, cumin, chili powder, paprika, salt, and black pepper.
  4. Pour in tomato sauce or salsa, stir well, and let simmer for 3-5 minutes.
  5. Remove from heat and mix in shredded cheese.

Step 3: Assemble the Chimichangas

  1. Lay a flour tortilla flat and spoon about ⅓ cup of beef mixture into the center.
  2. Fold in the sides, then roll the tortilla tightly like a burrito.
  3. Place seam-side down on the baking sheet.

Step 4: Brush & Bake

  1. Brush the tops of the chimichangas with melted butter or olive oil to help them crisp up.
  2. Bake for 20-25 minutes, flipping halfway, until golden brown and crispy.

Step 5: Serve & Enjoy

  1. Remove from the oven and let cool for a few minutes.
  2. Serve with sour cream, guacamole, salsa, or fresh cilantro.

Notes

  • Use sturdy tortillas – Helps prevent tearing and holds the filling better.
  • Brush with butter or oil – Creates a crispy, golden-brown exterior.
  • Don’t overfill – Too much filling can make it hard to fold properly.
