Ingredients
For the Chicken:
- 2 boneless, skinless chicken breasts
- 1 tablespoon avocado oil or olive oil
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and pepper, to taste
- Juice of ½ lime, for flavor and moisture while baking
For the Avocado Lime Sauce:
- 1 large ripe avocado
- 2 tablespoons fresh lime juice
- 1 clove garlic, minced
- 2 tablespoons avocado oil or olive oil
- 2–3 tablespoons water, to thin the sauce as needed
- Salt, to taste
Instructions
Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.
Rub the chicken breasts with oil, then season with garlic powder, onion powder, salt, pepper, and a splash of lime juice. Place in the prepared dish and bake for 20–25 minutes, or until the internal temperature reaches 165°F.
While the chicken bakes, blend the avocado, lime juice, minced garlic, oil, and a pinch of salt in a food processor or blender. Add water a tablespoon at a time until the sauce reaches a smooth, creamy consistency.
Once the chicken is done, let it rest for 5 minutes. Slice and top generously with the avocado lime sauce. Garnish with fresh cilantro or lime wedges if desired.
This is the kind of chicken bake that feels fancy but takes under 30 minutes from start to finish.
