Ingredients
Scale
- 2 cups (about 450g) cold mashed potatoes (plain or lightly seasoned)
- 2 tablespoons unsalted butter (melted or softened)
- 1/2 teaspoon salt (or to taste)
- 1 cup (120g) all-purpose flour, plus more for dusting
- Optional toppings or sides:
- Soft butter for serving
- Fried eggs, baked beans, sautéed mushrooms
- A spoonful of jam or honey
Instructions
- In a large mixing bowl, combine mashed potatoes, butter, and salt. Mix until smooth. Gradually add in flour and stir until the dough forms.
- Transfer dough to a floured surface. Knead lightly and shape into a 1/2 inch thick circle. Cut into 4 quarters.
- Heat a dry skillet over medium heat. Cook each farl for 3–4 minutes per side until golden and crisp outside, soft inside.
- Serve warm with butter or alongside your favorite breakfast items.
Notes
- Use cold mashed potatoes for best dough texture.
- Don’t overwork the dough to keep farls tender.
- Preheat skillet well before cooking.
- Adjust flour based on potato moisture.
- Best served fresh but can be stored and reheated in a skillet.
