- 2 pounds fresh asparagus, trimmed and cut into 1-inch pieces
- 1 large onion, chopped
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 6 cups chicken broth (or vegetable broth for vegetarian)
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper
- 1 cup heavy cream (or half-and-half for lighter version)
- Optional garnishes: asparagus tips, fresh herbs (parsley, dill), or a drizzle of olive oil
Instructions
- Cook Aromatics: Melt butter in a large soup pot over medium heat. Add onion and sauté until soft, about 5 minutes.
- Add Asparagus & Broth: Stir in asparagus pieces, add broth, season with salt and pepper. Simmer 15 minutes until asparagus is tender.
- Blend Smooth: Remove from heat. Blend soup with an immersion blender (or in batches) until smooth and creamy.
- Thicken: Whisk flour with a little broth until smooth. Stir into soup and simmer 5 minutes to thicken slightly.
- Add Cream: Stir in heavy cream and heat gently until warmed through. Do not boil.
- Serve: Ladle into bowls and garnish with asparagus tips or fresh herbs.

- Use fresh asparagus for best flavor; trim woody ends.
- For lighter soup, swap heavy cream with half-and-half or plant-based milk.
