  • 1 large onion, chopped
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 6 cups chicken broth (or vegetable broth for vegetarian)
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream (or half-and-half for lighter version)
  • Optional garnishes: asparagus tips, fresh herbs (parsley, dill), or a drizzle of olive oil

Instructions

  1. Cook Aromatics: Melt butter in a large soup pot over medium heat. Add onion and sauté until soft, about 5 minutes.
  2. Add Asparagus & Broth: Stir in asparagus pieces, add broth, season with salt and pepper. Simmer 15 minutes until asparagus is tender.
