Ingredients

  • 2 ripe nectarines, thinly sliced
  • ⅓ cup crumbled feta cheese
  • ¼ cup red onion, thinly sliced
  • ¼ cup chopped fresh basil (optional but adds depth)
  • ¼ cup chopped walnuts or almonds (optional for crunch)

For the Dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar or white wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste

Instructions

Step 1: Prepare the dressing
In a small bowl or jar, whisk together olive oil, vinegar, mustard, honey, salt, and pepper until well combined.

Step 2: Slice and chop
Thinly slice the nectarines and red onion. Chop the basil and nuts, if using.

Step 3: Toss the greens
Place arugula in a large salad bowl. Drizzle with a little of the dressing and gently toss to coat.

Step 4: Add toppings
Layer sliced nectarines, red onion, feta, basil, and nuts on top of the arugula.

Step 5: Finish and serve
Drizzle remaining dressing over the top and serve immediately.

  • Slice nectarines and onions and store them in separate airtight containers
  • Make the dressing up to 3 days ahead and refrigerate
