Ingredients
- 4 cups arugula, washed and dried
- 2 ripe nectarines, thinly sliced
- ⅓ cup crumbled feta cheese
- ¼ cup red onion, thinly sliced
- ¼ cup chopped fresh basil (optional but adds depth)
- ¼ cup chopped walnuts or almonds (optional for crunch)
For the Dressing:
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar or white wine vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey or maple syrup
- Salt and pepper to taste
Instructions
Step 1: Prepare the dressing
In a small bowl or jar, whisk together olive oil, vinegar, mustard, honey, salt, and pepper until well combined.
Step 2: Slice and chop
Thinly slice the nectarines and red onion. Chop the basil and nuts, if using.
Step 3: Toss the greens
Place arugula in a large salad bowl. Drizzle with a little of the dressing and gently toss to coat.
Step 4: Add toppings
Layer sliced nectarines, red onion, feta, basil, and nuts on top of the arugula.
Step 5: Finish and serve
Drizzle remaining dressing over the top and serve immediately.
Notes
- Slice nectarines and onions and store them in separate airtight containers
- Make the dressing up to 3 days ahead and refrigerate
- Wash and dry arugula, then store in a sealed container with a paper towel to absorb moisture
