These Apple Fritter Donuts are crispy on the outside, fluffy and cinnamon-spiced inside, and packed with caramelized apple chunks. Glazed to perfection, they’re a bakery-style fall treat you can make at home with ease.

For the Dough:
- 3 ½ cups (420g) all-purpose flour
- ¼ cup (50g) granulated sugar
- 1 packet (2 ¼ tsp) active dry yeast
- ½ tsp salt
- ¾ cup (180ml) warm milk (110°F/43°C)
- 2 tbsp unsalted butter, softened
- 2 eggs, room temperature
For the Apple Filling:
- 2 medium apples, peeled, cored, and chopped
- 2 tbsp unsalted butter
- ¼ cup (50g) brown sugar
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
For the Glaze:
- 1 ½ cups (180g) powdered sugar
- 2–3 tbsp milk
- ½ tsp vanilla extract
Instructions
- Make the Dough: In a bowl, mix warm milk, sugar, and yeast. Let sit for 5–10 minutes until foamy. Add eggs, butter, salt, and flour. Knead for 6–8 minutes until smooth. Cover and let rise for 1 hour.
- Prepare Apple Filling: Sauté apples in butter for 3–4 minutes. Add brown sugar, cinnamon, and nutmeg. Cook for 5 more minutes until caramelized. Cool completely.
- Shape Fritters: Roll out risen dough to ½ inch thick. Spread apple mixture on top. Fold, chop, and mix. Press into a rectangle and cut into 8–10 fritters.
- Second Rise: Place on parchment-lined trays, cover lightly, and let rise for 30 minutes.
- Fry: Heat oil to 350°F (175°C). Fry each fritter for 2–3 minutes per side until golden. Drain on paper towels, then transfer to cooling rack.
- Glaze: Mix powdered sugar, milk, and vanilla. Dip fritters or drizzle glaze over them while still warm.
Notes
- Use warm, not hot, milk to activate yeast without killing it.
- Cool apple filling fully before incorporating into dough.
- Fry in small batches to keep oil temperature steady.
- For extra flavor: Try maple glaze or toss hot fritters in cinnamon sugar.
