  • 3 ½ cups (420g) all-purpose flour
  • ¼ cup (50g) granulated sugar
  • 1 packet (2 ¼ tsp) active dry yeast
  • ½ tsp salt
  • ¾ cup (180ml) warm milk (110°F/43°C)
  • 2 tbsp unsalted butter, softened
  • 2 eggs, room temperature

For the Apple Filling:

  • 2 medium apples, peeled, cored, and chopped
  • 2 tbsp unsalted butter
  • ¼ cup (50g) brown sugar
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg

For the Glaze:

  • 1 ½ cups (180g) powdered sugar
  • 23 tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. Make the Dough: In a bowl, mix warm milk, sugar, and yeast. Let sit for 5–10 minutes until foamy. Add eggs, butter, salt, and flour. Knead for 6–8 minutes until smooth. Cover and let rise for 1 hour.
  2. Prepare Apple Filling: Sauté apples in butter for 3–4 minutes. Add brown sugar, cinnamon, and nutmeg. Cook for 5 more minutes until caramelized. Cool completely.
  3. Shape Fritters: Roll out risen dough to ½ inch thick. Spread apple mixture on top. Fold, chop, and mix. Press into a rectangle and cut into 8–10 fritters.
  4. Second Rise: Place on parchment-lined trays, cover lightly, and let rise for 30 minutes.
  5. Fry: Heat oil to 350°F (175°C). Fry each fritter for 2–3 minutes per side until golden. Drain on paper towels, then transfer to cooling rack.
  6. Glaze: Mix powdered sugar, milk, and vanilla. Dip fritters or drizzle glaze over them while still warm.
